If you run straight pipe, it's real loud up top. Regular exit out behind the bed, loud for everyone else, not really for you. Stacks are actually a touch quieter, and less raspy, as they have a deeper tone, however, it's LOUD inside the cab. Real loud.

Are you sure you need the muffler and cat? With both of those on, it's going to sound stock no matter what. Those two together really quiet the truck down, so even with stacks it'd be quiet. Real quiet. I'd check into that... I pass inspection every year without either of them in place.
Regardless, I wouldn't run the stack setup if I had kids in the back seat at all. You basically can't carry a conversation until you're up to speed. Once at speed though it lugs down and gets real quiet, almost stock quiet. Stomp on the skinny pedal and forget about talking to any passengers.
I only cut one hole in my bed, and that's how most kits are too.
