Probably headgaskets are shot if it's puking coolant and you have an EGR delete. Don't tow with hot tunes on. Banks stuff just fools the trucks computer into throwing extra fuel and timing at the truck without really tuning it.
Is your fan kicking on at all? What are your EGT's when going up the hill? The banks has an alarm deal to set doesn't it? Don't want to go over 1250 for extended times like going up hills and what not. Short bursts is OK, but heat will kill these motors fast.

Under full throttle on my race tunes I am only about 20-22psi myself, but the timing is greatly increased. However if I roll into it I can peg my 35psi gauge.
1150 really isn't anything to be concerned about, but since your coolant is going up, I would say you have headgaskets issues and I'll bet a clogged oil cooler, which is what causes the gaskets to go a lot of times. Can you log your engine coolant temp vs. your engine oil temp? They should never be farther apart than 15 degrees (less is better).
How many miles do you have? ARP headstuds, get the heads machined flat, rebuild oil cooler, victor reinz headgaskets, and get an SCT with custom tunes would by my suggestions. A coolant filter setup would be a good idea too. It's inexpensive.

The oil and coolant should ALWAYS be about the same temp, if you've got one going higher and then the other catching up your oil cooler is probably clogged.

oil cooler rebuild I'm not sure off the top of my head, but you can get price quotes on some of the ford forums (powerstrokenation.com is a good one) or possibly some of the dealers here, but there's not a lot of Ford specific ones here
Machining will be dependent on where you bring it, but usually around $500 for both heads, maybe less, maybe more.
Then it will depend if YOU do the work or pay someone to do it.
SCT with custom tunes is $425 or so, and it's an $80 upgrade to get extreme tunes. You can always buy a used one and get one tune at a time. I've seen the X-cal2s go for $200 sometimes a touch less on the forum, then tunes are $65 a piece from Eric @ Innovative, or $80 for an extreme or buy 3 tunes for $160
Labor will cost a fortune more than likely. The easiest way is to take the cab off, but it can be done by pulling the motor, and it can also be done by leaving the motor in with the cab on, but it's a PITA like that.

I had 10K on my truck and trailer up hills to 6000ft, went over 1200 once, but for the most part it was in the 950~1100 range. Unloaded it is MUCH lower. When I dumped number 8 injector I was in the 4 digit EGT, 10psi at 65mph! Smoking like a freight train. I have also seen 6-ohs with a EGR delete that has an exhaust leak before the turbo run pretty around 1150 just cruising.
