damn near anything you want, just tell them what you want and they will do it, call like innovative or elite, or if you have someone you prefer more go with them, just depends on who you like best. but they can do almost anything you want, from just a higher idle to turning your truck into a 500+ horse monster

You will never get 500+hp out of a 6.0 with just tuning, the fuel is simply not there.
Innovative is the way to go. High idle can be done on a stock truck without tuning btw. Innovative tunes are 420-430rwhp for their race tune. You wont get more than that without other mods. You will probably have issues with headgaskets running these tunes unless you drive like a putz everywhere. There are far more people who have had issues than have not with these tunes. I am one of them.

The higher horsepower tunes yield the best economy, as long as you can keep your foot out of it. They will also blow a little smoke, but the best tunes will just puff and once the turbo lights all you'll get is a light haze. You don't want to be rolling coal the whole way down the road, it defeats the purpose of good mileage. Smoke = waste power (to a point), so wasting power is generally not the best way to get mileage.
I'd recommend Innovatives street tune for all around good daily driving, and extreme street if you're ready for some good power, good mileage and to fix some blown head gaskets.
